Baking Birthday Cakes
If you're creating a fun shaped cake, making sure the shape comes out exactly right is crucial. When baking a three-dimensional or stand up cake make sure to use a firm batter. Pound cake mixes and mixes with pudding are good choices. Be sure to check the cake periodically with skewers to make sure the center is completely baked.

Crumb coating is essential when creating intricate decorations on your cake and attempting to frost a cake with curves and uneven edges. The crumb coat is a thin layer that protects your cake from crumbling when you apply the fondant or the top layer of icing. Don't use glazes to crumb coat. They tend to be too sticky. This layer is supposed to be thin. The crumb coat needs to be completely dry, and preferably refrigerated before starting the final layer of icing and decorating. The crumb coat will also help keep your cake moist.
